Dallas Temple

We are in the Dallas Temple district. The Temple is 3 hours from where we live... needless to say, we haven't gone as much as we would have liked being down here. So, when our Stake Temple Day came around, we decided it was time to go. We were able to take our good friend Joe, (an older guy who was baptized last October) down with us. He was able to do baptisms for the dead with the youth, while I did a session, and JC volunteered to watch Zenock. We sure enjoyed getting to know Joe a little better and being able to spend the day as a family.

If you can't tell... this is after the 3 hour drive to Dallas... (Zenock only slept 15 minutes), and a 3 hour session of playing in the sun, running around, chasing Zenock around in the sun, changing an "incredible hulk" diaper, and throwing up, because he (JC) had to change the "incredible hulk" diaper. I think we were all a little worn out. :)

P.S. The arrangements have been made and the tickets have been purchased... We are coming home August 11th-19th! Yeah! We are SO excited to see all ya'll!!!

Fourth of July!

Lots of posts... and last, but not least, our Fourth of July weekend!

We started the Fourth out by attending our ward's Annual pancake breakfast! My ward back home always did this, so it is a fun tradition to have with my family. Afterwards, we watched the dad's play baseball while us wives got to visit and let our little boys play in the dirt. Have I mentioned that all of us down here have little boys!!! Zenock has so many fun friends that we are going to miss. I'm glad they will all live close by for at least the next few years.

Later we had a fun BBQ with all the new and old "fellows" in our program. It was a great evening with great food and friends.
Texarkana has a big "Sparks in the Park" festival the day after the 4th. (This is when they do fireworks for the town.) We decided to check it out.

Zenock loved the petting zoo. Growing up on a farm I think I took advantage of being able to see animals all the time. It is weird that when my little boy sees animals he gets so excited, because he doesn't see them all the time. He was in total amazement just watching them.
He would point at the sheep and say, "That, mama, that!"

I think his favorite was this cute little pig. He didn't want to leave.

That night we enjoyed attempting to watch fireworks with friends, while we were eaten alive by mosquitos. Zenock was in awe with the fireworks and like the animals, he would point and say excitedly, "that, that!"

Next to sleeping and being lazy, our favorite past time this Summer is swimming! We spend lots of time down by the pool letting the days pass us by. :)

What we've been up to...

It seems like time is going by so fast! I can't believe it is already the 8th of JULY! I feel like my mind is going in every direction thinking about everything I need to do, should do, and am not doing while the rest of me is just sitting back enjoying the Summer....

Here are some of the things we have been up to:

I bought this new basket for all of Zenock's toys... He was asleep when I brought it home and put all of his toys in it. When he woke up he went straight to it and when I turned around, this is what I found. (I'm not sure why the picture is so blurry, sorry.)

JC brought this monkey home with him when he went to Kentucky. It has become Zenock's new best friend. They go everywhere together... it velcroes around him, so he will run around with him strapped to his back. He loves to give the monkey hugs and will bring it to us so we can give the monkey hugs as well! It is SO cute!

This is Zenock and JC's new jungle gym... haha. JC has wanted a bowflex since way before I married him. He found an awesome deal on ebay and I reluctantly agreed (hoping that when we move, we get into the 3 bedroom apartment!!! Pray for me!) As for now... this jungle gym sits in the middle of my kitchen. :) For the first time in my life I've heard the sentence, "Get out of the kitchen... I want to work out." Part of the "awesome deal" was going to Dallas to pick up our new bowflex. While on the way there we found Zenock's true love of music. We borrowed a friend's truck and were trying to find a good station when the song "It's ladies night" by Kool and the Gang came on the radio. When we looked back, our little guy was bobbing up and down and rocking out in his car seat. I don't think JC and I have ever laughed so hard. It is a new favorite song at our house.

Zenock has also attended nursery for the last 2 weeks in a row. When the kids in our ward are 15 mths. they let them go as long as a parent is with them. HE loves playing with all the kids... there are 2 girls and about 8 boys in our nursery, so he fits right in. They have these fun telephone cars that you can pull around and Zenock just loves them! He plays with them the whole time. So Sunday when we got home, I tied a string around his dump truck and he hasn't put it down since. It is like his little puppy dog following him around... we just might have to invest in a little puppy for him some day soon. Oh... and I bet our nursery has better treats than yours does... haha... seriously! On Sunday for snack time Zenock had: a plate full of cheetos, 2 rice cake snacks, 2 oreo cookies, 2 powdered sugar doughnuts, AND a handful of trix cereal! Talk about winding them up and sending them home!

Zenock is learning and growing so fast! He can say so many different words. New for this week, is "NO." (Yeah for us as parents!) On top of the 5 teeth he has been getting, 3 more are coming in... It has been a rough couple of weeks. We have had many sleepless nights of him kicking us out of bed (last resort) to even me giving up and getting in his crib... yes... HIS crib! After an hour or so of him lovingly trying to shove his toes up my nose, I gave up and took him to our bed. Hopefully, we are almost done with the teething process.

Easy Summer Recipes :)

I love quick and easy recipes... especially for Summer. I don't like taking a lot of time in the kitchen... (any time of year for that matter.) I came across this recipe a few weeks ago and it looked so easy and sounded so good. So what better way to test it out than with hungry missionaries. We usually have them over for dinner a couple of times a month and I love being able to test out new recipes with them. They were on exchanges and brought another elder with them and lets just say, they went crazy with these... they ate every single one. I made more and they ate those too! They loved them and now they keep asking JC how I made them... Anyhow, I stole this recipe from somewhere, so feel free to steal it from here:
Chicken Pitas
2 cups shredded chicken (I like to cook my chicken in the crockpot for a few hours, it makes it really easy to shred, or you can also use the canned chicken.)
1/2 cup Ranch
1/2 cup Shredded Monterey Cheese
1 can diced green chiles
Mix together and spoon into whole wheat pita (You can find these in the bakery/deli at wal-mart). Bake at 350 for 15 minutes.
Easy right???
While I'm at it... Here's another one I stole from Good Things Utah... so good and so easy! This is one of our favorite's anytime of the year.
Coke Chicken
4 chicken breasts
1 12 oz. can of coke
1 cup BBQ sauce (I just use kraft honey bbq)
1/2 cup of ketchup
Put it all in a crock pot and cook for 4 hours! (There is always lots of sauce left over. we like to use it for little smokies... It's great for groups and get together's. :)
